Hummus and Tomato Wrap
1 whole wheat flour tortilla
3 T homemade hummus (or store bought, I like Hope Brand, Original Flavor best)
1 T stone ground mustard
2 fresh campari tomatoes, quartered
6 leaves red leaf lettuce
6 leaves spinach
1 mini cucumber, cut into matchsticks
Fresh basil (optional)
Spread the hummus and mustard on the tortilla. Top with other ingredients, then fold over and enjoy!
