Tortilla Soup
This recipe is simple, yet delicious and can be ready in 10 minutes.
2 tsp canola or olive oil (or use water)
1 white onion
1 red bell pepper
2 roma tomatoes
2 cloves garlic, minced
1 32 oz box tortilla soup base by pacific foods
1 32 oz box low sodium tomato soup
1 15 oz can kidney beans
1 15 oz can black beans
1 T cumin (more, if desired)
2 tsp chili powder
Fresh green onions
Fresh cilantro
Blue chips
(optional: Pepperjack cheese)
Begin the onion first, letting it cook for a few minutes before adding all other ingredients in order. Garnish with green onions, cilantro, blue chips, and cheese. Enjoy!
