Great Greens
The best way to eat greens I've ever found. Roasted pecans are incredible in this dish -- and my husband swears they make our house smell like Christmas. I especially love it with fresh dill.
Great Greens
Serves 4
1 bunch kale, tough stems removed and leaves chopped
1 bunch swiss chard, chopped
2 T balsamic vinegar (I like fig balsamic if you can get that)
1 clove garlic, minced
No-salt seasoning blend, adjusted to taste (I use1/2 T Dr. Fuhrman's VegiZest)
1 T fresh dill, chopped or 2 tsp. dried dill
2 T fresh basil, or 1 tsp. dried basil
Black pepper to taste
1/2 c raw pecans, chopped and lightly toasted
Steam the kale, swiss chard, and garlic for 7 minutes. Transfer to serving bowl and add all other ingredients. Serve topped with toasted pecans and garnish with fresh herbs. Great with quinioa!
