Black Bean Lettuce Bundles


Black Bean Lettuce Bundles

2 c cooked or canned black beans, drained

1/2 large ripe avocado, peeled, pitted, and mashed

1/2 orange bell pepper, seeded and chopped

3 green onions, chopped

1/3 c chopped cilantro

1/3 c milk salsa

2 T fresh lime juice

1 small clove garlic

1 1/2 tsp ground cumin

12 large romaine lettuce leaves

In a bowl, combine all ingredients, except lettuce, and mix.

Place the mixture in the center of each lettuce leaf and roll up like a burrito.
