Purple Potato Bar

8 small purple potatoes (or use red)
2 broccoli crowns, chopped
1 tomato
3 green onions
1/4 c frozen peas
2 T parsley
2 T cilantro
Olive oil or butter to taste
Salt, to taste
Fresh ground pepper, to taste
Spike no-salt seasoning, to taste
Bake the purple potatoes at 450 degrees until soft (mine were fresh from our garden, so they took about an hour). Steam the broccoli for 5 minutes, or just until tender, then add the peas and steam for two more minutes. Chop the tomatoes, onions, parsley, and cilantro. Build your potato and enjoy warm!
