Black Bean Soup/Refried Black Beans
My darling friend Amber sent me this original recipe to share with you and I think it looks so good! She is adorable, hilarious, and you can't help but learn AND be excited to live healthy when you watch her happy video:

Black Bean Soup/Refried Black Beans
3 cups dried black beans, rinsed
1 yellow onion, diced
3 cloves garlic, minced
1 tbsp chili powder
1/2 tbsp cumin
1/2 tsp oregano
1 tsp salt (although it doesn't really need it--miracle!)
4 cups veggie broth
3 cups water
Cook on low for 10 hours. When finished, take 3/4 of soup mixture and purée to desired creamy-ness with immersion blender (I used my Blendtec. They say to wait til it cools a bit but I didn't. I just pulsed it a few times.) Combine all soup mixture and serve with desired toppings. Would make a great chip dip or filling for burritos/tacos!
