Fried Green Tomatoes with Lemon-Basil Mayonnaise

Fried Green Tomatoes
20 fresh green tomatoes
3/4 c Light Rye Wasa Cracker, ground fine in a food processor
1/2 c cornmeal
1/4 c flour
1/2 tsp freshly ground black pepper
1 tsp Real salt (or more)
2 T fresh thyme
2 eggs
2 c Canola Oil
Combine the first six ingredients in a bowl and stir until blended. Cut the tomatoes into 1/4 inch slices and dip first in the egg, then into the coating mixture. Drop into a hot pan full of oil and flip when one side is golden brown. Place on a paper towel to absorb excess oil. Serve warm and dip in the Lemon Basil Mayonnaise.
Lemon Basil Mayonnaise
1/4 c Mayonnaise (I like Spectrum brand Canola Oil Mayonnaise)
2 T basil, chopped fine
Salt, to taste (1/4 tsp at most)
Black pepper, freshly ground
2 T lemon juice
Simply stir until smooth and enjoy!
