Eggplant Pesto Pizza

My mom and Joelle (my lovely sister!) made these amazing pizzas for a family dinner the other night. They were incredibly flavorful and each had its own unique flavor. They aren't big on measuring, but I got an ingredient list from them...thank you both!

Pizza Crust

2 c flour

1 c warm water

1 T yeast

2 T oil

1/2 tsp salt

Knead and shape, no need to let it rise just put the toppings right on!

Pizza Sauce

Mezzetta pesto sauce

Kerrigold cheddar cheese

Bally Shannon parmesan 4 cheese blend

Eggplant

Mushrooms

Fresh Basil

Garlic powder

Salt

Bake the eggplant with the parmesan 4 cheese blend on top until the cheese is melted. Add eggplant along with other ingredients to the large pizza, and bake until cheese is golden.

Pizza Crust (same as above)

Kerrigold cheddar cheese

Bally Shannon parmesan 4 cheese blend

Zucchini

Onions

Mushrooms

Sun dried tomatoes

Fresh grape tomatoes

Garlic powder

Salt

Stuff crust by putting in the cheeses and then rolling it inside. Wet your fingers and pinch the crust closed so it doesn't open in baking.

Cook until golden brown.
