Fresh, Italian pasta sauce with sun dried tomatoes

2 T olive oil

3 large cloves garlic / 4 regular cloves

2 T coarsley chopped fresh flat-leaf parsley

1 T dried oregano

1/2 tsp Hungarian paprika

2 T julienned sun dried tomatoes in olive oil

1 T dried basil or 1/4 cup fresh

14.5 oz diced tomatoes in juice

6 oz tomato paste

2 T champagne vinegar

1 tsp brown sugar

1/4 c cooking wine

1 tsp salt

Combine the olive oil, roasted garlic, parsley, oregano, paprika, and sun-dried tomatoes in a cuisinart. Add in the canned tomatoes, sugar, and vinegar, and stir to mix evenly (Use some of the olive oil from the sun dried tomatoes if necessary to blend).

Transfer tomato mixture into a pot and cook until just warm. Add to your choice of pasta and serve.
