Chia Maca Yogurt

I am not a fan of pudding or yogurt, but I'm a huge fan of this chia goodness! Chia has gained popularity as a superfood, but I added a video that states its superfood properties below.

Maca is also lauded as a superfood. It's plant that grows high in the Andes mountains of central Peru. Maca is a relative of the radish and has been cultivated as a vegetable crop for over 3,000 years. Natives believe maca has many health benefits including enhanced energy, improved athletic performance, helping the anemic, and boosting the immune system. In addition to its aphrodesiac properties, some believe it helps with female hormone imbalance, increasing fertility, menstrual problems and menopause (webmd). The list goes on and on...I don't have any experience with its health benefits, but I do know it tastes like butterscotch! That's why I like it! I thought it might be good to show what maca looks like -- it's the light yellow powder in the top left of the picture.

Chia Maca Yogurt

Wait time: An hour or so

1 c Homemade Almond milk

1/4 c Chia seeds (or more until it's thick)

1 tsp Cinnamon

1 tsp Maca Powder

Pinch nutmeg

Maple syrup (or agave nectar) to taste

Begin stirring the almond milk before pouring in the chia (to prevent clumping). Add all other ingredients and wait an hour until the chia seeds hydrate. This is a quick, easy breakfast meal to grab on the go. I love adding lots of fresh fruit -- especially blueberries.
