Celery Soup
A favorite breakfast food of ours, Celery Soup is amazing because it takes 5 minutes to make and it's just a tasty bowl of vegetables in a new configuration. Delicious as a pita chip dip.
CELERY SOUP
1 small bunch celery, chopped
2 tomatoes, chopped
1/4 cup fresh parsley
1 T lemon juice
4 tablespoons salsa
1 avocado
1 T Bragg's liquid aminos
A pinch of salt, if desired
Water, if needed, to thin
Mix all ingredients in a food processor until it reaches the desired consistency (adding water if necessary). I like mine to still have some texture and crunch so I don't leave it long. Add salt to taste.
Possible variations could include adding cucumber, bell pepper, or other herbs per your preference.
